French, American, East European barrels. Heavily toasted, light toasted. Staves, chips or cubes instead.. The world of oak is one on its own and deserves a better understanding by any wine lover. So what is the influence of using oak? Besides making a cellar look cool and romantic, oak adds aroma and flavor compounds to wine. Think of vanilla, sweet spices and clove. It also can softens a wine and can give you that warm mouthfeel that many people appreciate. Some wine lovers swear with these 'oaky' flavors and believe that is makes almost any wine taste better, whereas others think it distracts from the actual aromas and flavors of the wine.
